Doing my best to make sure I can be there.  No guarantees, though, social calendar has been filling ever-faster.  Looks like my next day without anything major associated is in the middle of May  Sleep

Also, why do people need to call out the fact that they're making "meat" chili?  Per Terlingua rules:
B. PREPARING CHILI
1.Chili must be cooked on site the day of the cookoff from scratch. "Scratch" means starting with raw meat and using regular
spices
. Commercial chili powder is permissible, but complete commercial chili mixes are NOT permitted.
2.Chili must be prepared out in the open  in as sanitary a manner as possible.
3.No beans, pasta, rice or other similar items are allowed.
4.The head cook must prepare the chili to be judged

So I guess I am not even bringing “chili” to the meeting since it will have beans in it. And I am thinking I will be adding home smoked pulled pork shoulder to it

Define raw meat???  I like kidney beans in my chili and like it over rice or pasta. I also use some fine aged dark rum to deglaze the pot.  I support returning Texas and California to Mexico and revoking the US citizenship of anyone who was ever born there.

i'll be there. undecided as to whether i'll be bringing a chili or not.

Per Terlingua rules:
this is just for fun. we don't follow or use any "official" rules for what's in the chili or how you make it.
